PASSION FRUIT BREAKFAST POTS

These delicious and healthy pots of loveliness will set you up for the day. Any fresh seasonal fruit can be substituted, so you can enjoy this all year round.

 

Keeping it local we chose premium East Anglian ingredients: maple and pecan granola from Crush in Norfolk, summer flower honey from Hoyle’s in Essex and creamy Greek-style yoghurt from Marybelle in Suffolk.

 

Ingredients (serves 2 hungry people or 4 small people):

 

6 passion fruit

280g Greek-style yoghurt

1 scant tspn vanilla bean paste

1 heaped tspn runny honey

About 70g granola

 

Method:

 

Mix the honey and vanilla bean paste into the yoghurt.

 

Halve the passion fruit and scoop the insides into a bowl.

 

Layer the granola, fruit and yoghurt into glasses, ending with a sprinkle of granola and a spoonful of passion fruit pulp. Eat and enjoy!
